Pistachio oil is one of the members of the cashew nut family, making a small tree that originated in Central Asia and the Middle East. The seeds in this tree are widely used as food. The seeds of this plant are relatively small, usually with smooth shells. It is a desert plant and can tolerate high saline soil. Proper ripeness of the fruit requires a long and hot summer. There are many sub-species of pistachios, but only one is ordinary pistachios. Pistachios are not ordinary cooking oil, they are mainly used for decoration. Therefore, research interest is also low.
